Finally, a delicious shortbread cookie without the butter, but yet it tastes buttery....and with a hint of almond. The shortbread can be mixed with toasted pistachios or dried cherries and then piped.  One of the best things about this cookie is that we use the finest organic spelt flour, Not the yucky spelt flour. It makes for a light & fluffy, slightly toasty-flavored cookie with more protein.
